10 minute Vegan Recipe with just 8 Ingredients

Are you looking for an easy meal? Then this Vegan Pesto Zoodles with Pomegranate Seeds is for you! With just 8 ingredients you can prepare this healthy vegan dish for lunch, dinner or a side dish in about 10 minutes! But what are zoodles? Zoodles is just a zucchini spiraled into strings so you can use it as spaghetti! The easiest way to do this is with a spiralizer which you can easily find online for a few euros or in shops like Blokker or Action. The spiralizing is a real fun job to do for kids. Perfect way to teach them some healthy cooking tricks! If you don’t have a spiralizer you can also make strings with a vegetable peeler. The pesto is super easy to make as well: Just mix the ingredients for the pesto in a food processor and you’re done. The most challenging part of the recipe might be getting the pomegranate seeds out of the pomegranate… but if you’re lazy (like me) you can just buy them in a tray at the supermarket, saving you a lot of time.

Ingredients for 2-3 persons:
  • 2 zucchinis
  • 50 gram pomegranate seeds
For the pesto:
  • 30 gr. basil
  • 50 gr. pine nuts
  • 3 tablespoons olive oil
  • 1/2 lemon
  • 2 tablespoons nutritional yeast
  • 1 garlic glove
Instructions:

Spiralize the zucchinis and put them in a bowl.

Throw all the ingredients for the pesto in a food processor, while saving some basil leaves and pine nuts for the topping later on. Flavor with some salt, pepper and/or a few drops of agave syrup if needed.

Roast the left over pine nuts.

Now toss the pesto, zoodles and pomegranate seeds together. Top it off with the left over basil leaves and pine nuts… Done!
