October 4th – Eat NO Animals Day
This Thursday it’s World Animal Day! The Dutch organization ‘Wakker Dier’ has called everybody to eat no animals on this day and of course Green Amsterdam totally supports this idea. Are you in? Then Green Amsterdam has a super simple recipe for you: A vegan chicken noodles stir fry meal with a crunchy touch!
SoFine – Vegan SoChicken Sticks
The crunchy touch is coming from the SoChicken sticks, which are 100 % plant based. The sticks are a very good vegan substitute for chicken nuggets or schnitzel because of its similar structure and harty taste. You can find the sticks from SoFine at Jumbo supermarkets, located at the vega department.
The Recipe – Asian Crunchy Vegan Chicken Noodles
Ingredients for 4 persons:
- 200 gram bimi
- 200 gram mushrooms
- 250 gram (stir fry) noodles
- 1 pack SoChicken sticks from SoFine (or a similar plant based crunchy chicken product)
- 1 cm of ginger
- 1 lime
- 1 tablespoon agave syrup
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 3 tablespoons soy sauce
- 1 chili pepper
- 2 garlic cloves
- handful of cilantro
- 1 spring onion
- Few drops of sriracha
Cook the noodles, following the instructions on the package. When done, rinse with cold water and set aside.
In the meanwhile whisk half a lime, the sesame oil, soy sauce and agave syrup together in a small bowl and set aside.
Cut the garlic, ginger and chili pepper in small cubes. Heat some vegetable oil in a stir fry pan and put in the ginger, pepper and garlic. After a minute toss in the bimi and mushrooms and stir fry for about 3 minutes.
Now prepare the Sofine Chicken Sticks by putting some oil in a pan and frying them 3 minutes on each side.
Cut the cilantro and spring onions.
Mix the noodles with the vegetables and soy sauce mix.
Now top off the noodles with some cilantro and spring onions.
Cut the SoChicken sticks into pieces and add lay them on top of the noodles, sprinkle some lime and sriracha drops over them and… Enjoy!
